Grilled Sweet And Spicy Pickles

Ingredients

  • 1 ¼ cup distilled white vinegar
  • 1 ¼ cup water
  • 1 cup sugar
  • 2 tablespoons salt
  • 10 small cucumbers (4 to 5 inches long)
  • 1 medium onion
  • 6 sprigs dill
  • 3 clove garlic, minced
  • 3 ¾ teaspoon crushed red pepper

Instructions

  1. Combine the pickling liquid ingredients in a saucepan and heat until the sugar dissolves, then remove from heat and cover.
  2. Wash the cucumbers and trim the ends, then quarter them lengthwise. Cut the onion into ½ inch wide strips.
  3. Prepare a charcoal fire for direct grilling and grill the cucumbers for 2 minutes on each triangular side, and the onion strips for 2 minutes on each side.
  4. Remove from the grill and place the cucumbers and onions into sterilized pint-sized mason jars. Add dill, garlic, and crushed red pepper to each jar, then pour in the pickling liquid and seal the jars.
