Golden Crusted Brussels Sprouts

Ingredients

  • 1 pound small brussels sprouts
  • 2 tablespoons extra-virgin olive oil
  • ¼ cup grated cheese or chopped nuts
  • to taste fine-grain sea salt
  • to taste freshly ground black pepper

Instructions

  1. Wash the brussels sprouts, trim the ends, remove outer leaves, and cut them in half.
  2. Toss the halved sprouts in a bowl with 1 tablespoon of olive oil.
  3. Heat the remaining olive oil in a large skillet over medium heat.
  4. Place the sprouts in the skillet flat side down, sprinkle with salt, cover, and cook for about 5 minutes.
  5. Check for tenderness; if not tender, cover and cook a few more minutes.
  6. Uncover, increase heat, and cook until the flat sides are deep brown and caramelized, tossing occasionally.
  7. Season with more salt, pepper, and dust with cheese or nuts before serving.
