Split Pea, Bacon & Potato Soup

Instructions
- Cut the bacon into strips and cook in a large pot until crispy.
- While the bacon cooks, dice the onion and mince the garlic.
- Add the onion and garlic to the pot and cook until the onion is soft.
- Add the split peas, chicken broth, bay leaf, and cracked pepper to the pot.
- Peel and cube the potatoes, then add them to the soup.
- Bring the soup to a boil, then reduce heat and simmer for 45 minutes.
- Check that the peas are soft, then turn off the heat and cool slightly.
- Remove the bay leaf and blend the soup until creamy with some chunks.
- Taste and adjust salt as needed before serving.
