Split Pea, Bacon & Potato Soup

Ingredients

  • 6 oz bacon
  • 1 medium yellow onion
  • 2 cloves garlic
  • 1 lb split peas
  • 8 cups chicken broth
  • 1 whole bay leaf
  • 1 ½ lbs potatoes
  • ½ tsp salt
  • to taste freshly cracked pepper

Instructions

  1. Cut the bacon into strips and cook in a large pot until crispy.
  2. While the bacon cooks, dice the onion and mince the garlic.
  3. Add the onion and garlic to the pot and cook until the onion is soft.
  4. Add the split peas, chicken broth, bay leaf, and cracked pepper to the pot.
  5. Peel and cube the potatoes, then add them to the soup.
  6. Bring the soup to a boil, then reduce heat and simmer for 45 minutes.
  7. Check that the peas are soft, then turn off the heat and cool slightly.
  8. Remove the bay leaf and blend the soup until creamy with some chunks.
  9. Taste and adjust salt as needed before serving.
