Ingredients

The soup

  • 1 tablespoon olive oil
  • 1 medium onion (chopped)
  • ΒΌ teaspoon salt
  • to taste pepper
  • 1 clove garlic (minced)
  • 1 leaf bay leaf
  • 1 pound green split peas (dried, picked over and rinsed)
  • 8 cups chicken broth
  • 1 cup milk
  • to taste hot sauce

Toppings

  • to taste bacon (chopped)
  • to taste ham (diced)
  • to taste sausage

Instructions

  1. Heat olive oil in a large soup pot over medium heat.
  2. Add chopped onion and season with salt and pepper, cooking until softened.
  3. Stir in minced garlic, bay leaf, and split peas, cooking for 1 minute.
  4. Pour in chicken broth, bring to a boil, then reduce heat to medium-low and simmer for 45 minutes until peas are tender.
  5. Remove from heat, discard bay leaf, and puree the soup using an immersion blender or in batches in a freestanding blender.
  6. Stir in milk and hot sauce if desired, then ladle into bowls and add toppings before serving.
