Easy Split Pea Soup

Instructions
- Heat olive oil in a large soup pot over medium heat.
- Add chopped onion and season with salt and pepper, cooking until softened.
- Stir in minced garlic, bay leaf, and split peas, cooking for 1 minute.
- Pour in chicken broth, bring to a boil, then reduce heat to medium-low and simmer for 45 minutes until peas are tender.
- Remove from heat, discard bay leaf, and puree the soup using an immersion blender or in batches in a freestanding blender.
- Stir in milk and hot sauce if desired, then ladle into bowls and add toppings before serving.
