Slow Cooker Split Pea Soup

Instructions
- Add rinsed and sorted split peas to a 6-quart crock pot.
- Add your choice of meat if using.
- Add onion, celery, bay leaves, thyme, carrots, garlic, and pepper.
- Pour in the broth and stir. Add liquid smoke for vegetarian version if desired.
- Place the lid on the crock pot.
- Cook on Low for 8-9 hours, or until peas are soft and creamy.
- Remove bay leaves and meat (if used) after cooking.
- Stir the soup well and add salt to taste.
- Serve hot, noting that the soup will thicken as it cools.
