Slow Cooker Split Pea Soup

Ingredients

The soup base

  • 1 lb Green Split Peas, rinsed and sorted (unsoaked)
  • 1 each Onion, diced
  • 3 ribs Celery, diced
  • 2 each Bay Leaves
  • ¼ teaspoon Thyme Leaves, dried
  • 3 each Carrots, chopped
  • 4 cloves Garlic, pressed or finely minced
  • ¼ teaspoon Pepper
  • 6 cups Low Sodium Chicken or Vegetable Broth (or water)
  • 1 teaspoon Liquid Smoke (Optional for vegetarian version)
  • ½ teaspoon Kosher Salt (add last, after cooking, if needed)

The meat (optional)

  • 1 each Meaty Ham Bone (or meat of your choice)
  • 6 slices Bacon, uncooked, chopped
  • 2 small Ham Hocks
  • 2 - 3 cups Diced Leftover Ham
  • 1 each Leftover Ham Bone

Instructions

  1. Add rinsed and sorted split peas to a 6-quart crock pot.
  2. Add your choice of meat if using.
  3. Add onion, celery, bay leaves, thyme, carrots, garlic, and pepper.
  4. Pour in the broth and stir. Add liquid smoke for vegetarian version if desired.
  5. Place the lid on the crock pot.
  6. Cook on Low for 8-9 hours, or until peas are soft and creamy.
  7. Remove bay leaves and meat (if used) after cooking.
  8. Stir the soup well and add salt to taste.
  9. Serve hot, noting that the soup will thicken as it cools.
