Slow Cooker Split Pea Soup

Instructions
- Wash and drain the split peas.
- Sauté onions and garlic in olive oil until soft.
- Transfer sautéed onions and garlic to the slow cooker.
- Add split peas, chopped carrots, ham hock, and chicken broth to the slow cooker.
- Cover and cook on LOW for 10 hours until the peas are tender.
- Remove the ham hock, season the soup with black pepper.
- Shred the meat from the ham hock and add it back to the soup.
