Ingredients

  • 1 12-ounce package Applegate Fire Roasted Red Pepper Chicken Sausage
  • 1 Tbsp avocado oil
  • 2 small bell peppers
  • 1 small yellow onion
  • 2 cloves garlic
  • 2 portabella mushrooms sliced
  • 1 bunch kale
  • 1 small head cauliflower
  • to taste salt
  • to taste black pepper
  • 2-3 green onions (optional)

Instructions

  1. Prepare cauliflower rice according to package directions and set aside.
  2. Preheat the grill to medium-high heat.
  3. Toss the peppers, onions, mushrooms, kale, and garlic with avocado oil and season with salt and pepper.
  4. Slice the sausages into ½-inch thick rounds.
  5. Arrange the vegetables and sausages in a single layer on a perforated grill pan and cook for 5-8 minutes.
  6. Stir the mixture and reduce heat if necessary, cooking for an additional 8-10 minutes until the veggies are tender.
  7. Remove from heat and serve over cauliflower rice, garnishing with sliced green onions if desired.
