Instructions
- Prepare cauliflower rice according to package directions and set aside.
- Preheat the grill to medium-high heat.
- Toss the peppers, onions, mushrooms, kale, and garlic with avocado oil and season with salt and pepper.
- Slice the sausages into ½-inch thick rounds.
- Arrange the vegetables and sausages in a single layer on a perforated grill pan and cook for 5-8 minutes.
- Stir the mixture and reduce heat if necessary, cooking for an additional 8-10 minutes until the veggies are tender.
- Remove from heat and serve over cauliflower rice, garnishing with sliced green onions if desired.
