Ingredients

Smoky Vinaigrette

  • ¼ cup olive oil
  • 2 Tbsp red wine vinegar
  • 1 tsp coarse deli mustard (or Dijon)
  • ¼ tsp garlic powder
  • ¼ tsp dried oregano
  • ½ tsp smoked paprika
  • ¼ tsp salt
  • to taste freshly cracked black pepper
  • ¼ tsp sugar

Sausage and Vegetables

  • 12 oz smoked sausage
  • 1 lb broccoli crown
  • 1 count bell pepper (any color)
  • 1 count red onion

For Serving

  • 1 cup long grain white rice (uncooked)
  • 1 handful chopped parsley

Instructions

  1. Preheat the oven to 400ºF and line a large baking sheet with parchment paper.
  2. Combine the vinaigrette ingredients in a bowl or jar and whisk or shake until combined.
  3. Slice the smoked sausage into ½-inch medallions and chop the vegetables into appropriate sizes.
  4. Place the sausage and vegetables on the baking sheet and drizzle with 2 Tbsp of vinaigrette, tossing to coat.
  5. Roast in the oven for 35-40 minutes, stirring halfway through.
  6. While roasting, cook the rice by boiling it with water, then simmering and letting it rest.
  7. After roasting, toss the sausage and vegetables with the remaining vinaigrette and season as needed.
  8. Serve by placing rice in bowls, topping with roasted sausage and vegetables, and drizzling with more vinaigrette.
