For Serving

long grain white rice (uncooked)

Instructions
- Preheat the oven to 400ºF and line a large baking sheet with parchment paper.
- Combine the vinaigrette ingredients in a bowl or jar and whisk or shake until combined.
- Slice the smoked sausage into ½-inch medallions and chop the vegetables into appropriate sizes.
- Place the sausage and vegetables on the baking sheet and drizzle with 2 Tbsp of vinaigrette, tossing to coat.
- Roast in the oven for 35-40 minutes, stirring halfway through.
- While roasting, cook the rice by boiling it with water, then simmering and letting it rest.
- After roasting, toss the sausage and vegetables with the remaining vinaigrette and season as needed.
- Serve by placing rice in bowls, topping with roasted sausage and vegetables, and drizzling with more vinaigrette.
