Ingredients

The omelet

  • 6 eggs eggs
  • to taste none kosher salt
  • to taste none pepper
  • 2 tablespoons fresh chives, finely chopped
  • 2 tablespoons butter
  • ½ cup oil packed sun-dried tomatoes, roughly chopped
  • 1 cup shredded Gruyère cheese
  • 2 slices crusty whole grain bread, toasted
  • 2 ears fresh corn, grilled and kernels removed
  • 1 whole avocado, sliced
  • 2-4 slices cooked thick cut bacon
  • 2 handfuls fresh arugula

Lemony Tahini Dressing

  • ¼ cup tahini
  • ¼ cup olive oil
  • 1 whole lemon, juiced
  • ½ cup fresh cilantro and basil
  • to taste none kosher salt

Instructions

  1. Whisk the eggs with salt, pepper, and chives in a bowl.
  2. Heat a skillet and melt 1 tablespoon of butter.
  3. Pour half of the egg mixture into the skillet and allow it to set briefly.
  4. Gently move the set eggs towards the center and let the runny eggs fill the space.
  5. Sprinkle half of the sun-dried tomatoes and half of the cheese on top.
  6. Let the omelet set, then slide it onto a plate and fold it like a letter.
  7. Repeat the process with the remaining ingredients to make the second omelet.
  8. Serve each omelet on toasted bread with arugula, grilled corn, bacon, and avocado.
  9. Drizzle with tahini dressing before serving.
