Lemony Tahini Dressing

Instructions
- Whisk the eggs with salt, pepper, and chives in a bowl.
- Heat a skillet and melt 1 tablespoon of butter.
- Pour half of the egg mixture into the skillet and allow it to set briefly.
- Gently move the set eggs towards the center and let the runny eggs fill the space.
- Sprinkle half of the sun-dried tomatoes and half of the cheese on top.
- Let the omelet set, then slide it onto a plate and fold it like a letter.
- Repeat the process with the remaining ingredients to make the second omelet.
- Serve each omelet on toasted bread with arugula, grilled corn, bacon, and avocado.
- Drizzle with tahini dressing before serving.
