Ingredients

Whole30 "Peanut" Sauce

  • ¼ cup creamy almond butter
  • 1 tsp sesame oil
  • ½ cup full-fat coconut milk
  • 1 Tbsp fresh lime juice
  • 2 Tbsp coconut aminos
  • 1 tsp dried ground ginger
  • 2 cloves garlic
  • 1/8-1/4 tsp cayenne pepper or crushed red pepper flakes

Whole30 Zoodle Bowls

  • 1 large boneless skinless chicken breast
  • to taste sea salt and freshly ground black pepper
  • 2 small zucchinis
  • 1 cup red cabbage
  • 1/2 lime juice
  • ¼ tsp salt
  • 1 large mango
  • to taste fresh cilantro
  • to taste microgreens
  • to taste chopped almonds

Instructions

  1. Make the Whole30 peanut sauce by blending all sauce ingredients until smooth.
  2. Pour ¼ cup of the sauce into a bag or bowl and marinate the chicken for 15 minutes.
  3. Combine red cabbage, lime juice, and salt in a bowl and massage until softened.
  4. Preheat the broiler and cook the marinated chicken for 6 minutes on each side, then bake until cooked through.
  5. Slice the chicken and assemble the bowls with zucchini, cabbage, chicken, and mango.
  6. Garnish with cilantro, microgreens, and almonds, and serve with the remaining sauce.
