Instructions
- Make the Whole30 peanut sauce by blending all sauce ingredients until smooth.
- Pour ¼ cup of the sauce into a bag or bowl and marinate the chicken for 15 minutes.
- Combine red cabbage, lime juice, and salt in a bowl and massage until softened.
- Preheat the broiler and cook the marinated chicken for 6 minutes on each side, then bake until cooked through.
- Slice the chicken and assemble the bowls with zucchini, cabbage, chicken, and mango.
- Garnish with cilantro, microgreens, and almonds, and serve with the remaining sauce.
