Dan Dan Noodles with Shrimp

Ingredients

The noodles

  • 12 ounces Chinese flat wheat noodles

The sauce

  • 2 tablespoons sugar
  • 2 tablespoons dark soy sauce
  • 2 tablespoons reduced-sodium soy sauce
  • 2 tablespoons Chinese sesame paste or tahini
  • 2 tablespoons garlic-chili sauce
  • 2 tablespoons chicken broth
  • 1 tablespoon cider vinegar
  • 2 tablespoons vegetable oil
  • 1 tablespoon chopped garlic
  • 1 tablespoon toasted sesame seeds

The toppings

  • 1 each red mini pepper
  • 1 each yellow mini pepper
  • 1 each orange mini pepper
  • 1 bunch scallions, chopped halfway up the green
  • 12 raw large shrimp, peeled and deveined

Instructions

  1. Boil water in a large pot and cook the noodles according to package directions, then drain and rinse them.
  2. In a small bowl, mix sugar, dark soy sauce, reduced-sodium soy sauce, sesame paste, garlic-chili sauce, chicken broth, and cider vinegar.
  3. Heat a wok or large skillet over medium-high heat and add vegetable oil.
  4. Add shrimp and garlic to the hot pan, cooking for 2-3 minutes until shrimp are almost done.
  5. Remove the pan from heat, add sesame seeds to the shrimp, and keep warm.
  6. Combine the drained noodles with the sauce, tossing to coat thoroughly.
  7. Return the shrimp to the heat to finish cooking.
  8. Top the noodles with sliced peppers, scallions, and shrimp before serving.
