Ingredients

The noodles

  • 2 pounds zucchini
  • 2 teaspoons salt

The chili oil

  • ½ cup light-tasting olive or avocado oil
  • 1 tablespoon whole black peppercorns
  • ½ inch cinnamon stick
  • 2 tablespoons crushed red pepper flakes

The pork

  • 1 tablespoon extra-virgin olive oil
  • 2 inches fresh ginger
  • 1 jalapeño
  • 3 cloves garlic
  • pounds ground pork
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

The sauce

  • 2 tablespoons tahini or almond butter
  • 2 teaspoons toasted sesame oil
  • ½ teaspoon Chinese five-spice powder
  • ¼ teaspoon ground black pepper
  • ¼ cup coconut aminos
  • 2 tablespoons unseasoned rice vinegar
  • pinch coconut sugar
  • cup cornichons

Garnish

  • a handful cashews
  • 2–3 scallions

Instructions

  1. Julienne the zucchini and toss with salt in a colander to drain.
  2. Combine oil, peppercorns, cinnamon, and red pepper flakes in a saucepan to make chili oil.
  3. Cook the pork in a skillet with ginger, jalapeño, and garlic until browned.
  4. Mix tahini, sesame oil, five-spice, black pepper, coconut aminos, vinegar, and sugar to make the sauce.
  5. Combine the sauce with the cooked pork and add cornichons.
  6. Stir-fry the zucchini noodles in the skillet until hot, then mix with the pork and sauce.
  7. Serve in bowls topped with chili oil, cashews, and scallions.
