Ingredients

The noodles

  • 8 oz fresh noodles

The meat

  • 6 oz ground pork
  • 1 pinch salt
  • ½ teaspoon sesame oil
  • 3 dashes white pepper
  • 2 stalks scallions
  • 1 tablespoon oil
  • 2 tablespoons ground peanuts
  • fresh red chilies sliced

The chili oil

  • 5 tablespoons oil
  • 2 tablespoons dried chili flakes
  • ½ tablespoon Sichuan peppercorn

The sauce

  • 2 tablespoons soy sauce
  • ½ teaspoon chicken bouillon powder
  • 2 tablespoons sesame paste
  • 1 teaspoon sesame oil
  • tablespoons sugar
  • 2 cloves garlic
  • ½ tablespoon white sesame seeds

Instructions

  1. Boil water and cook the fresh noodles until al dente, then drain and rinse with cold water.
  2. Mix ground pork with salt, sesame oil, white pepper, and half of the scallions; set aside.
  3. Heat oil in a pot for the chili oil, then add chili flakes and Sichuan peppercorns; cover and let sit.
  4. Combine the chili oil with the remaining sauce ingredients and whisk well.
  5. Mix the sauce with the noodles in a bowl.
  6. Cook the ground pork in a hot pan until fully cooked, then mix with the noodles and sauce.
  7. Serve topped with ground peanuts, remaining scallions, and fresh red chilies.
