Instructions
- Boil water and cook the fresh noodles until al dente, then drain and rinse with cold water.
- Mix ground pork with salt, sesame oil, white pepper, and half of the scallions; set aside.
- Heat oil in a pot for the chili oil, then add chili flakes and Sichuan peppercorns; cover and let sit.
- Combine the chili oil with the remaining sauce ingredients and whisk well.
- Mix the sauce with the noodles in a bowl.
- Cook the ground pork in a hot pan until fully cooked, then mix with the noodles and sauce.
- Serve topped with ground peanuts, remaining scallions, and fresh red chilies.
