Ingredients

The noodles

  • 12 ounces spaghetti noodles

The sauce

  • cups low-sodium chicken broth
  • ¼ cup creamy peanut butter
  • ¼ cup low-sodium soy sauce
  • 1 teaspoon chili garlic sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon brown sugar
  • 1 tablespoon rice vinegar
  • 2 teaspoons sesame oil

The meat

  • 2 pounds lean ground turkey or beef

The seasoning

  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 4 cloves garlic, finely minced
  • 1 tablespoon freshly grated ginger
  • ½ to 1 cup fresh, chopped cilantro

Instructions

  1. Cook the spaghetti noodles in boiling salted water until al dente, then drain and rinse.
  2. In a bowl, whisk together the chicken broth, peanut butter, soy sauce, chili garlic sauce, cornstarch, brown sugar, rice vinegar, and sesame oil until smooth.
  3. In a skillet, cook the ground meat with salt, pepper, garlic, and ginger until browned.
  4. Drain excess grease, then add the sauce to the skillet and simmer until thickened.
  5. Stir in the cilantro and pour the mixture over the noodles. Serve immediately.
