Ingredients

Bread Dough

  • cups bread flour
  • 2 tablespoons caster sugar
  • ¼ teaspoon salt
  • 1 teaspoon active dry yeast
  • tablespoons beaten egg
  • cup milk
  • 1⅔ tablespoons unsalted butter, softened

Chocolate Cake

  • ¼ cup unsalted butter, melted
  • 1 bar (50 g) chocolate bar
  • ¼ cup milk
  • 3 large egg yolks
  • ½ cup cake flour
  • 3 large egg whites
  • ¼ cup caster sugar

Instructions

  1. Combine bread flour, caster sugar, salt, active dry yeast, beaten egg, and milk in a large mixing bowl and knead until a dough forms.
  2. Add softened butter and knead for 10 to 15 minutes until smooth and elastic.
  3. Cover the dough and let it rise in a warm area for 40 minutes until doubled in size.
  4. Prepare the chocolate cake by melting butter and chocolate together, then whisk in milk, egg yolks, and sifted cake flour until smooth.
  5. In a separate bowl, beat egg whites and sugar until stiff peaks form, then gently fold into the chocolate mixture.
  6. Pour the batter into a lined baking tin and bake for 20 minutes, then cool and trim the cake.
  7. Roll out the risen bread dough, place the chocolate cake on top, and roll it tightly into a log.
  8. Transfer the log to a greased loaf tin and let it rise for another 45 minutes.
  9. Preheat the oven and brush the loaf with beaten egg before baking for 25 minutes until golden brown.
