Ingredients

Curly Fries

  • 2 medium sweet potatoes
  • 2 medium beets
  • 2 tablespoons oil

Crispy Fish

  • 4 (4- to 6-ounce) white fish filets (cod or haddock)
  • 1 teaspoon coarse salt
  • ½ teaspoon ground black pepper
  • ¼ cup all-purpose flour
  • 1 pinch cayenne pepper
  • 2 large eggs
  • ½ cup panko breadcrumbs

Tartar Sauce

  • ¼ cup mayonnaise
  • 1 tablespoon chopped capers
  • 1 tablespoon chopped dill pickles or relish
  • 1 teaspoon pickle juice or lemon juice
  • 1 pinch coarse salt
  • 1 pinch ground black pepper
  • 1 dash hot sauce (optional)

Instructions

  1. Preheat the oven to 425 degrees.
  2. Spiralize the sweet potatoes and beets, then toss them on a greased baking sheet with oil and salt.
  3. Bake for 25-35 minutes until crispy, tossing occasionally.
  4. Prepare a baking sheet with a wire rack and coat it with cooking spray.
  5. Season the fish filets with salt and pepper, and set up three bowls for coating: flour, egg wash, and panko.
  6. Coat each fish filet in flour, then egg wash, and finally panko, placing them on the wire rack.
  7. Spray the fish with cooking spray and bake for 10-12 minutes, flipping once, until crispy.
  8. While the fish and fries bake, whisk together the tartar sauce ingredients in a small bowl.
  9. Serve the fish with tartar sauce and curly fries.
