Instructions
- Preheat the oven to 425 degrees.
- Spiralize the sweet potatoes and beets, then toss them on a greased baking sheet with oil and salt.
- Bake for 25-35 minutes until crispy, tossing occasionally.
- Prepare a baking sheet with a wire rack and coat it with cooking spray.
- Season the fish filets with salt and pepper, and set up three bowls for coating: flour, egg wash, and panko.
- Coat each fish filet in flour, then egg wash, and finally panko, placing them on the wire rack.
- Spray the fish with cooking spray and bake for 10-12 minutes, flipping once, until crispy.
- While the fish and fries bake, whisk together the tartar sauce ingredients in a small bowl.
- Serve the fish with tartar sauce and curly fries.
