Instructions
- Wash and clean the potatoes, then slice them into ¼ thick fries.
- Soak the cut potatoes in cold water for 30 minutes.
- Preheat the oven to 200 degrees to keep the fries warm.
- Heat 2-3 inches of oil in a cast iron pan to 375 degrees F.
- Drain and pat dry the potatoes, then fry them for 5-7 minutes until golden brown.
- Remove the fries and season with salt and pepper, keeping them warm in the oven.
- Prepare the fish by patting dry and coating with a flour mixture of flour, salt, and black pepper.
- Heat more oil in the pan to 375 degrees F. for frying the fish.
- Mix flour, cornstarch, baking powder, paprika, salt, and black pepper in a bowl.
- Add cold dark beer to the dry ingredients and whisk to form a batter.
- Dip the coated fish into the batter and fry for 5-7 minutes, turning until golden brown.
- Drain the fish on a paper towel and serve with malt vinegar and lemon wedges.
