Ingredients

The Chips

  • 1 ¼ pounds russet potatoes
  • 1 teaspoon table salt
  • ½ teaspoon black pepper

The Fish

  • 12 ounces cod filets or your favorite white fish
  • 1 cup flour
  • 2 tablespoons cornstarch
  • 1 teaspoon table salt
  • 1 teaspoon paprika
  • 1 teaspoon baking powder
  • ¼ teaspoon garlic powder
  • ½ teaspoon black pepper
  • 6 - 8 ounces dark beer (cold)
  • vegetable oil for frying

Instructions

  1. Wash and clean the potatoes, then slice them into ¼ thick fries.
  2. Soak the cut potatoes in cold water for 30 minutes.
  3. Preheat the oven to 200 degrees to keep the fries warm.
  4. Heat 2-3 inches of oil in a cast iron pan to 375 degrees F.
  5. Drain and pat dry the potatoes, then fry them for 5-7 minutes until golden brown.
  6. Remove the fries and season with salt and pepper, keeping them warm in the oven.
  7. Prepare the fish by patting dry and coating with a flour mixture of flour, salt, and black pepper.
  8. Heat more oil in the pan to 375 degrees F. for frying the fish.
  9. Mix flour, cornstarch, baking powder, paprika, salt, and black pepper in a bowl.
  10. Add cold dark beer to the dry ingredients and whisk to form a batter.
  11. Dip the coated fish into the batter and fry for 5-7 minutes, turning until golden brown.
  12. Drain the fish on a paper towel and serve with malt vinegar and lemon wedges.
