Banana Protein Balls

Ingredients

  • 1 cup coconut flour
  • teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ cup granulated sweetener (allulose or similar)
  • 1 medium banana (about ¼ cup mashed)
  • 2 tablespoons maple syrup
  • ¼ cup peanut butter
  • ¼ cup milk
  • ¼ cup chocolate chips (optional)

Instructions

  1. Line a baking sheet or plate with parchment paper.
  2. Blend the banana until smooth in a blender or food processor, then add the other ingredients except the chocolate chips.
  3. If the batter is too thick, add extra milk; if too thin, add more coconut flour.
  4. Fold in the chocolate chips.
  5. Form the mixture into bite-sized balls using your hands and refrigerate for at least 20 minutes to firm up.
