Ingredients

The batter

  • 2 tablespoons ground flax meal
  • 3 medium over-ripe bananas, mashed (about 1 cup mashed)
  • ½ cup melted coconut oil
  • ½ cup real maple syrup
  • cup almond milk
  • 1 tablespoon vanilla extract
  • 2 cups white whole wheat flour
  • 2 teaspoons baking powder
  • ¼ teaspoon kosher salt
  • 1 cup dark chocolate chips

For serving

  • to taste honey or maple

Instructions

  1. Preheat the oven to 350°F and line 18 muffin tins with paper liners.
  2. Mix ground flaxseeds with 1/3 cup water in a small bowl and let sit for 5 minutes until thickened.
  3. In a large bowl, combine mashed bananas, coconut oil, maple syrup, almond milk, and vanilla extract until mixed well.
  4. Add the flaxseed mixture and stir to combine.
  5. Incorporate flour, baking powder, and salt, mixing until just combined.
  6. Fold in the dark chocolate chips.
  7. Divide the batter evenly among the muffin tins.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
