Orange Chicken Marinade

Ingredients

The marinade

  • ½ cup 100% orange juice
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey

The skewers

  • 1 ¼ pounds boneless, skinless chicken breasts
  • 2 large navel oranges
  • 1 large red onion
  • 1 large bell pepper
  • to taste kosher salt
  • to taste freshly ground black pepper
  • optional chopped fresh cilantro

Instructions

  1. Whisk together orange juice, soy sauce, and honey in a bowl.
  2. Place chicken in a ziptop bag, pour in the marinade, seal tightly, and coat the chicken.
  3. Marinate at room temperature for at least 30 minutes or refrigerate longer.
  4. Preheat the grill to medium-high heat.
  5. Slice one orange into rounds and cut the onion and bell pepper into chunks.
  6. Thread chicken, onion, bell pepper, and orange slices onto skewers.
  7. Oil the grill and cook the skewers for 6 to 8 minutes, turning occasionally.
  8. Grill the cut sides of the remaining orange halves for 2 to 4 minutes.
  9. Squeeze charred oranges over the skewers, season, and serve warm.
