Pinoy Pork Skewers

Ingredients

The marinade

  • 1 cup soy sauce
  • 1 whole garlic, peeled & smashed
  • 1 small onion, minced
  • 2 units lemons
  • ½ cup 7UP
  • 1 tsp ground black pepper
  • 5 tbs dark brown sugar
  • 1 cup banana sauce (or regular ketchup)

The skewers

  • 2 lbs pork butt or belly

Instructions

  1. Soak bamboo skewers in water for at least 30 minutes.
  2. Cut pork into ½ inch thick x 1 inch wide x 1 ½ inch long pieces.
  3. Slide pork onto skewers and set aside.
  4. In a large bowl, combine soy sauce, garlic, onion, juice of 2 lemons, 7UP, ground black pepper, dark brown sugar, and ketchup, mixing well.
  5. Pour the marinade over the pork, cover, and refrigerate for at least 4 hours or overnight.
  6. Grill the skewers on direct heat until the pork is cooked, flipping as necessary for char marks.
