Creamy Ham and Potato Soup

Instructions
- Heat olive oil in a soup pot over medium-high heat.
- Sauté onions, carrots, and celery for 3-4 minutes until onions are translucent.
- Add minced garlic and cook for another 2 minutes.
- Stir in broth, diced ham, potatoes, oregano, and thyme; cover and simmer for 15-25 minutes until potatoes are soft.
- Remove the lid, add milk and cream, and stir.
- Create a cornstarch slurry by mixing cornstarch with 2 tablespoons of soup, then stir it back into the pot.
- Allow the soup to thicken for about 10 minutes before serving.
