Creamy Ham and Potato Soup

Ingredients

  • 1 tablespoon olive oil
  • cup chopped onions
  • cup chopped carrots
  • cup chopped celery
  • 3-4 cloves garlic
  • 4 cups broth
  • 1½ - 2 pounds potatoes
  • 2 cups cooked and diced ham
  • ½ teaspoon ground thyme
  • ½ teaspoon ground oregano
  • ½ cup milk
  • ½ cup heavy whipping cream
  • 1 tablespoon cornstarch

Instructions

  1. Heat olive oil in a soup pot over medium-high heat.
  2. Sauté onions, carrots, and celery for 3-4 minutes until onions are translucent.
  3. Add minced garlic and cook for another 2 minutes.
  4. Stir in broth, diced ham, potatoes, oregano, and thyme; cover and simmer for 15-25 minutes until potatoes are soft.
  5. Remove the lid, add milk and cream, and stir.
  6. Create a cornstarch slurry by mixing cornstarch with 2 tablespoons of soup, then stir it back into the pot.
  7. Allow the soup to thicken for about 10 minutes before serving.
