Ingredients

The sauce

  • 4 Tablespoons Olive Oil
  • 1 small Onion, chopped
  • 5 cloves Garlic, minced
  • 5 lbs Tomatoes, chopped (about 9 ½ cups)
  • ½ cup Red Wine
  • ½ cup Water (optional)
  • 3 teaspoons Kosher Salt
  • ½ teaspoon Pepper
  • 1 Tablespoon Cocoa Powder, unsweetened
  • 2 teaspoons Basil, dried
  • 2 ½ Tablespoons Italian Seasoning
  • ¼ - ½ teaspoon Red Pepper Flakes
  • 2 teaspoons Oregano, dried
  • 2 Tablespoons Parsley Flakes, dried
  • 3-4 (6 oz) cans Tomato Paste

Optional adjustments for acidity

  • 2 teaspoons Sugar (optional)
  • ¼ - ½ teaspoon Baking Soda (optional)

Instructions

  1. Prepare all vegetables and ingredients before starting.
  2. Use the Sauté setting on the Instant Pot and heat the olive oil, then add the chopped onion and cook until translucent.
  3. Add minced garlic and cook for about 30 seconds.
  4. Stir in the chopped tomatoes.
  5. Add red wine, salt, pepper, cocoa powder, basil, Italian seasoning, red pepper flakes, oregano, and parsley flakes, and mix well.
  6. Add tomato paste on top without stirring it in.
  7. Close the lid, set the steam release knob to Sealing, and cook on Pressure Cook for 25 minutes.
  8. After cooking, turn off the pot and allow natural pressure release until the pin drops.
  9. Open the lid, stir the sauce carefully, and adjust for acidity if needed by adding sugar or baking soda.
  10. Let the sauce cool, then blend until smooth.
  11. Store in jars in the fridge for up to 5 days or freeze.
