Instructions
- Prepare all vegetables and ingredients before starting.
- Use the Sauté setting on the Instant Pot and heat the olive oil, then add the chopped onion and cook until translucent.
- Add minced garlic and cook for about 30 seconds.
- Stir in the chopped tomatoes.
- Add red wine, salt, pepper, cocoa powder, basil, Italian seasoning, red pepper flakes, oregano, and parsley flakes, and mix well.
- Add tomato paste on top without stirring it in.
- Close the lid, set the steam release knob to Sealing, and cook on Pressure Cook for 25 minutes.
- After cooking, turn off the pot and allow natural pressure release until the pin drops.
- Open the lid, stir the sauce carefully, and adjust for acidity if needed by adding sugar or baking soda.
- Let the sauce cool, then blend until smooth.
- Store in jars in the fridge for up to 5 days or freeze.
