Classic Marinara Sauce

Ingredients

  • ¼ cup olive oil
  • 1 small onion, finely chopped
  • 4 cloves garlic, thinly sliced
  • 2 sprigs basil
  • 2 cans whole peeled tomatoes (28-ounce)
  • to taste Kosher salt
  • to taste freshly ground pepper

Instructions

  1. Heat olive oil in a medium heavy pot over medium heat.
  2. Cook the onion, stirring occasionally, until very soft, about 8–10 minutes.
  3. Add garlic and cook, stirring occasionally, until very soft, about 5 minutes; stir in basil.
  4. Add the tomatoes, crushing them with your hands as you go; season with salt and pepper.
  5. Bring the mixture to a simmer, then reduce heat and simmer gently, stirring occasionally, until the sauce thickens, about 1 hour.
  6. Season with additional salt and pepper to taste.
  7. Let the sauce cool before storing.
