Ingredients

The dip

  • 4 cans seasoned corn, drained
  • 2 7-ounce cans green chilies
  • 1 bunch green onions, chopped
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 2 cups shredded cheese
  • to taste Cajun/Creole seasoning
  • to taste Jalapeño or Chipotle Tabasco sauce

Optional additions

  • 6-8 slices cooked bacon, crumbled
  • ¼-½ cup pickled jalapeños, chopped

Instructions

  1. Combine the corn, green chilies, and chopped green onions in a large bowl.
  2. If desired, add crumbled bacon and pickled jalapeños.
  3. Stir in the mayonnaise, sour cream, and shredded cheese until well combined.
  4. Season the mixture with Cajun seasoning and Tabasco sauce to taste.
  5. Cover and refrigerate for at least 4 hours.
  6. Before serving, sprinkle with additional Cajun seasoning and/or crushed Fritos if desired.
  7. Serve with Fritos.
