Healthy Zucchini Bread

Ingredients

  • cups Paleo baking flour
  • ½ tsp sea salt
  • 1 tsp baking soda
  • cup coconut sugar
  • cups grated zucchini
  • ½ cup melted coconut oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¾ cup mini chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a bread pan with parchment paper.
  2. In a large mixing bowl, combine the flour, sea salt, baking soda, and coconut sugar.
  3. Add the grated zucchini, melted coconut oil, eggs, and vanilla extract to the bowl and stir together.
  4. Fold in the mini chocolate chips.
  5. Transfer the batter to the prepared bread pan and sprinkle additional chocolate chips on top if desired.
  6. Bake for 45 to 50 minutes, or until a toothpick inserted comes out clean.
  7. Remove from the oven and let it cool completely before slicing and serving.
