The tortillas and filling

Instructions
- Preheat a skillet over medium heat.
- Season the meat with salt and pepper, then cook in olive oil until done, about 4 to 5 minutes. Let rest and slice thinly.
- Heat another skillet or griddle and add a small amount of olive oil.
- Place a tortilla in the skillet, sprinkle cheese, add meat, onion, and cilantro, then top with more cheese.
- Add another tortilla on top and press down gently.
- Cook for a few minutes on each side until crispy and cheese is melted. Repeat with remaining ingredients.
- Remove from skillet and let cool briefly before cutting in half.
- Serve with salsa or guacamole.
