Ingredients

The tortillas and filling

  • 12 pieces small corn tortillas
  • 1 pound skirt steak
  • 1 cup shredded cheese (such as Monterey Jack or Oaxaca)
  • ½ cup chopped onion
  • ½ cup chopped cilantro

Seasoning and oil

  • to taste salt
  • to taste pepper
  • as needed tablespoons olive oil

For serving

  • as needed salsa

Instructions

  1. Preheat a skillet over medium heat.
  2. Season the meat with salt and pepper, then cook in olive oil until done, about 4 to 5 minutes. Let rest and slice thinly.
  3. Heat another skillet or griddle and add a small amount of olive oil.
  4. Place a tortilla in the skillet, sprinkle cheese, add meat, onion, and cilantro, then top with more cheese.
  5. Add another tortilla on top and press down gently.
  6. Cook for a few minutes on each side until crispy and cheese is melted. Repeat with remaining ingredients.
  7. Remove from skillet and let cool briefly before cutting in half.
  8. Serve with salsa or guacamole.
