Ingredients

The Steak

  • 2 teaspoons Kosher Salt
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Ground Black Pepper
  • ½ teaspoon Coriander
  • ½ teaspoon Cinnamon
  • ½ teaspoon Chili Powder
  • ½ teaspoon Ground Coffee or Instant Coffee
  • 16 ounces Skirt Steak

The Corn Salad

  • 2 cups Cooked Corn Kernels
  • ¼ cup Red Onion, finely diced
  • ¼ cup Cilantro, chopped
  • 1 lime zested and juiced
  • 2 cloves Garlic, mashed
  • ¼ teaspoon Chili Powder
  • ½ teaspoon Kosher Salt
  • 1 ½ cups Greek Yogurt

For Assembling + Garnishing

  • 12 pieces Street Corn Tortillas
  • ½ – ¾ cup Cotija Cheese, crumbled
  • 1 spoonful Marinated Onions

Instructions

  1. Prepare the seasoning by mixing all the spices in a small bowl.
  2. Rub the steak generously with the seasoning blend.
  3. Heat the grill to 450°F and grill the steak for 4 minutes on each side for medium-rare.
  4. Let the steak rest for 5-10 minutes before slicing.
  5. Cook the corn, either on the grill or stovetop, for about 10 minutes.
  6. In a large bowl, combine the cooked corn with red onion, cilantro, lime zest, lime juice, garlic, chili powder, salt, and yogurt.
  7. Mix the corn salad ingredients well and adjust seasonings to taste.
  8. Warm the tortillas and assemble the tacos with steak, corn salad, cotija cheese, and marinated onions.
  9. Garnish with fresh cilantro and serve.
