Instructions
- Prepare the seasoning by mixing all the spices in a small bowl.
- Rub the steak generously with the seasoning blend.
- Heat the grill to 450°F and grill the steak for 4 minutes on each side for medium-rare.
- Let the steak rest for 5-10 minutes before slicing.
- Cook the corn, either on the grill or stovetop, for about 10 minutes.
- In a large bowl, combine the cooked corn with red onion, cilantro, lime zest, lime juice, garlic, chili powder, salt, and yogurt.
- Mix the corn salad ingredients well and adjust seasonings to taste.
- Warm the tortillas and assemble the tacos with steak, corn salad, cotija cheese, and marinated onions.
- Garnish with fresh cilantro and serve.
