Instructions
- Prepare the flank steak by tenderizing it to a 1-inch thickness.
- Mix the dry rub spices and massage them into the steak, letting it rest for at least 20 minutes.
- Prepare the tomato pico by mixing cherry tomatoes, red onion, and cilantro in a bowl, then adding apple cider vinegar, lime juice, and salt.
- Heat olive oil in a skillet and cook the flank steak for about 4½ minutes on each side until the desired doneness is reached.
- Let the steak rest for 10 minutes before slicing it into thin strips.
- Assemble the tacos by spreading Greek yogurt on tortillas, adding steak, pico, cotija cheese, avocado, and lime juice.
