Ingredients

The steak

  • 1 lb. flank steak
  • 1 tbsp garlic powder
  • 1 tsp chili powder
  • 1 tsp cumin
  • ¼ tsp smoked paprika
  • 1 tsp kosher salt
  • ¼ tsp pepper
  • tsp brown sugar
  • 2 tbsp olive oil

The tomato pico

  • 10 oz. cherry tomatoes, quartered
  • ½ cup red onion, diced
  • ½ cup cilantro, roughly chopped
  • 2 tsp apple cider vinegar
  • 2 tsp lime juice
  • tsp salt

Taco toppings

  • 8-10 small flour tortillas
  • ½ cup Greek yogurt
  • 1 large avocado, chopped
  • ¼ cup cotija cheese
  • to taste fresh lime slices

Instructions

  1. Prepare the flank steak by tenderizing it to a 1-inch thickness.
  2. Mix the dry rub spices and massage them into the steak, letting it rest for at least 20 minutes.
  3. Prepare the tomato pico by mixing cherry tomatoes, red onion, and cilantro in a bowl, then adding apple cider vinegar, lime juice, and salt.
  4. Heat olive oil in a skillet and cook the flank steak for about 4½ minutes on each side until the desired doneness is reached.
  5. Let the steak rest for 10 minutes before slicing it into thin strips.
  6. Assemble the tacos by spreading Greek yogurt on tortillas, adding steak, pico, cotija cheese, avocado, and lime juice.
