Ingredients

  • 1 pound flank steak or skirt steak, sliced
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • ½ large onion, sliced
  • 2 cups shredded cheese
  • 1 cup guacamole or 2 avocados, mashed
  • 2 large tomatoes, chopped
  • 1 bunch parsley, chopped
  • 8 medium corn tortillas
  • 2 fresh jalapenos, diced

Instructions

  1. Season the sliced steak with salt and pepper.
  2. Heat olive oil in a non-stick pan, add onion and garlic, and cook for a minute.
  3. Add the sliced steak and cook until no longer pink, then cover to keep warm.
  4. Clean the pan and heat it again, placing one tortilla down, followed by cheese and steak.
  5. Top with more cheese and another tortilla, cooking until the cheese melts and edges are crispy.
  6. Remove from heat, lift one tortilla, and add guacamole, diced tomatoes, parsley, and jalapenos.
