Ingredients

The steak

  • 1.5 lbs. flank steak
  • 1.5 teaspoons coarse salt
  • 3 teaspoons fajita seasoning

The veggies

  • 1 large green bell pepper
  • 1 large red bell pepper
  • 1 large yellow bell pepper
  • ½ large red onion
  • 4 cloves garlic

The cooking oil

  • 2 tablespoons avocado oil

The tortillas

  • 8 small flour tortillas

Optional toppings

  • ½ cup fresh chopped cilantro
  • ¼ cup table crema

Instructions

  1. Tenderize the flank steak and season with salt.
  2. Thinly slice the bell peppers, onion, and garlic.
  3. Slice the flank steak into thin strips against the grain.
  4. Heat a skillet and add avocado oil, then cook the steak with fajita seasoning for 2-3 minutes.
  5. Remove the steak and sauté onion and garlic in the drippings for 2 minutes.
  6. Add the sliced peppers and season with remaining fajita seasoning, sauté for 5-6 minutes.
  7. Add the steak back to the skillet and cook for an additional minute.
  8. Serve the steak and veggies in tortillas with optional toppings.
