Grilled Steak Fajitas

Ingredients

The steak

  • lbs flank steak, trimmed
  • 3 cloves garlic, crushed
  • 1 tbsp cumin
  • 2 pieces scallions, sliced (optional)
  • to taste salt
  • to taste fresh pepper

The vegetables

  • 3 medium onions, sliced into long strips
  • 3 pieces bell peppers, sliced into strips
  • 1 tbsp olive oil
  • to taste salt
  • to taste fresh pepper

The tortillas

  • 12 pieces 6-inch flour or corn tortillas

Instructions

  1. Pierce the steak with a fork and season with cumin, garlic, scallions, salt, and pepper. Let rest at room temperature for at least 10 minutes.
  2. In a grill-safe pan, combine onions, peppers, olive oil, salt, and pepper. Toss to coat.
  3. Place the pan on the BBQ and cook on medium-low heat for about 20 minutes until onions are caramelized.
  4. Once the vegetables are done, keep them warm on the grill and raise the flame to high.
  5. Sear the steak for 4-6 minutes without moving it, then flip and cook for a few more minutes until desired doneness.
  6. Remove the steak from the grill and let it rest for a few minutes before slicing thinly.
  7. Combine the sliced steak with the cooked onions and peppers and serve with tortillas, cheese, guacamole, and sour cream.
