Grilled Steak Fajitas

The steak

The vegetables

onions, sliced into long strips

bell peppers, sliced into strips

The tortillas

6-inch flour or corn tortillas
Instructions
- Pierce the steak with a fork and season with cumin, garlic, scallions, salt, and pepper. Let rest at room temperature for at least 10 minutes.
- In a grill-safe pan, combine onions, peppers, olive oil, salt, and pepper. Toss to coat.
- Place the pan on the BBQ and cook on medium-low heat for about 20 minutes until onions are caramelized.
- Once the vegetables are done, keep them warm on the grill and raise the flame to high.
- Sear the steak for 4-6 minutes without moving it, then flip and cook for a few more minutes until desired doneness.
- Remove the steak from the grill and let it rest for a few minutes before slicing thinly.
- Combine the sliced steak with the cooked onions and peppers and serve with tortillas, cheese, guacamole, and sour cream.
