Ingredients

The marinade

  • ¼ cup olive oil
  • cup lime juice
  • 1 teaspoon sugar
  • teaspoons salt
  • ¼ teaspoon ground cumin
  • 2 cloves garlic, minced
  • ¼ cup water
  • teaspoons smoked paprika
  • 1 teaspoon onion powder
  • tablespoons chili powder

The main ingredients

  • pounds flank steak
  • 1 yellow onion thinly sliced
  • 3 bell peppers thinly sliced (can use red, orange, yellow or a combination)
  • 2 tablespoons chopped cilantro
  • tortillas, guacamole, sour cream, cheese, salsa various for serving

Instructions

  1. Combine olive oil, lime juice, sugar, salt, cumin, garlic, water, smoked paprika, onion powder, and chili powder in a resealable bag or bowl and whisk together.
  2. Add the steak, onions, and peppers to the marinade and chill for at least 1 hour.
  3. Preheat the grill or skillet to medium-high heat.
  4. Cook the steak for 5-6 minutes per side for medium doneness, then let it rest for 5 minutes.
  5. Cook the peppers and onions for 4-5 minutes until tender, seasoning with salt to taste.
  6. Slice the steak thinly against the grain and serve it over the cooked peppers and onions, garnished with cilantro.
