Ingredients

Fajitas

  • ¼ cup olive oil or other preferred oil
  • ½ cup fresh lime juice
  • ¼ cup apple cider or red wine vinegar
  • 10 cloves garlic, finely minced
  • 1 tablespoon granulated sugar
  • 1 tablespoon cumin
  • 2 teaspoons salt
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground coriander
  • 1 ½ to 2 pounds flank steak

Chipotle Sour Cream Sauce

  • 1 cup sour cream
  • 1 teaspoon minced chipotle in adobo sauce
  • 2 to 3 teaspoons adobo sauce
  • 1 tablespoon fresh lime zest

For Serving

  • to taste tortillas
  • to taste other toppings of choice (e.g., tomatoes, cilantro, cheese, sautéed or grilled peppers, pickled onions)

Instructions

  1. 1. Whisk together the marinade ingredients and coat the steak in the mixture. Refrigerate for at least 8 hours or up to 24 hours.
  2. 2. Preheat the grill to medium-high heat.
  3. 3. Grill the steak for 4-6 minutes per side, depending on desired doneness. Let it rest for 5-10 minutes before slicing.
  4. 4. Mix the chipotle sour cream ingredients together and refrigerate.
  5. 5. Serve the sliced steak on tortillas with chipotle sour cream and desired toppings.
