Ingredients

Fajita Steak Marinade

  • ½ cup orange juice
  • ½ cup soy sauce
  • ¼ cup lemon juice
  • ¼ cup olive oil
  • 2 tablespoons lime juice
  • 2 cloves garlic
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon black pepper
  • ¼ teaspoon ground chipotle chili pepper
  • ½ bunch fresh cilantro
  • 1½ to 2 pounds skirt, flank, or flap steak

Vegetables

  • 1 tablespoon vegetable oil
  • ½ large onion
  • 2 bell peppers any color
  • ¼ teaspoon ground cumin
  • ¼ teaspoon chili powder
  • Salt and pepper

Fajita Toppings

  • 8 tortillas warmed
  • Sour cream (optional)
  • Guacamole (optional)
  • Pico de gallo (optional)

Instructions

  1. Prepare the marinade by mixing all marinade ingredients in a bowl and marinate the steak for at least 4 hours, preferably 24 hours.
  2. Slice the onion and bell peppers into thin slices.
  3. Broil the steak for 4-6 minutes per side until desired doneness, then let it rest before slicing.
  4. Cook the vegetables in a skillet over medium-high heat until charred and tender.
  5. Serve the sliced steak and vegetables over warm tortillas with optional toppings.
