Piña Colada Popsicles

Ingredients

The pineapple

  • 1 cup chopped fresh pineapple
  • Tbsp white rum

The popsicles

  • 1 14-ounce can coconut cream
  • 3 Tbsp organic cane sugar
  • 1 cup rum-soaked pineapple

Instructions

  1. Soak the chopped pineapple in white rum for 5-10 minutes.
  2. Blend the coconut cream and sweetener until smooth.
  3. Drain excess rum from the pineapple and add it to the blender, pulse to combine.
  4. Pour the mixture into popsicle molds and insert sticks.
  5. Freeze for 4-6 hours until firm.
  6. To remove, let sit at room temperature for 10 minutes or dip in warm water.
