Cherry, Arugula and Quinoa Salad

Salad

1 handful
dark cherries, pitted and sliced in half

goat cheese crumbles

several handfuls
arugula

cooked quinoa (preferably red or black)
Instructions
- Rinse 1 cup of quinoa under water for a minute, then add it to a pot with 2 cups of water.
- Bring the quinoa to a boil, then cover and simmer for 15 to 18 minutes.
- Remove from heat and let sit for a few minutes before fluffing with a fork.
- Whisk together the dressing ingredients.
- In a bowl, toss the arugula with the dressing, then add warm quinoa, goat cheese, and cherries.
