Instructions
- Prepare the marshmallows by mixing gelatin with cold water and letting it sit.
- In a saucepan, combine sugar, corn syrup, salt, and water, then heat until the syrup reaches 240ºF.
- Pour the syrup into the gelatin mixture and beat until thick and tripled in size.
- Add vanilla and peppermint extracts, then dust a baking dish with cornstarch and confectioners' sugar.
- Pour the marshmallow mixture into the dish and smooth the top, optionally adding food coloring for a swirl effect.
- Let the marshmallows dry uncovered overnight, then cut into squares and dust with more sugar mixture.
- For the hot chocolate mix, grind chocolate chips and combine with powdered sugar, cocoa powder, dry milk, and salt.
- Process the mixture until fine, then whisk to combine.
- To serve, heat milk, mix in hot chocolate mix, add schnapps, and top with marshmallows.
