Instructions
- Prepare the baking dish by sifting together powdered sugar and corn starch, then grease the dish.
- Sprinkle gelatin on cold water and let it bloom for about 10 minutes.
- Combine sugar, corn syrup, salt, and remaining water in a saucepan and heat until it reaches 240°F.
- Slowly add the hot syrup to the bloomed gelatin while mixing on low, then increase to high and beat for about 5 minutes.
- Add food coloring and beat again until well mixed.
- Fold in the cacao nibs gently.
- Pour the mixture into the prepared baking dish, smoothing the top, and sprinkle remaining cacao nibs on top.
- Cover lightly and let the marshmallows set at room temperature for 3-4 hours.
- Cut the marshmallows into desired sizes and store in an airtight container.
