Homemade Marshmallows

Instructions
- Mix powdered sugar and cornstarch in a bowl and set aside.
- Line a baking dish with foil and grease it.
- Dissolve gelatin in half of the cold water in the stand mixer bowl and let it rest for 15 minutes.
- In a saucepan, combine remaining water, corn syrup, sugar, and salt, and cook until it reaches 240 degrees.
- Pour the hot sugar mixture into the gelatin mixture while mixing on low speed, then increase to high speed and whip until fluffy and thick.
- Pour the mixture into the prepared pan and spread evenly with a greased spatula.
- Dust the top with some powdered sugar mixture, cover, and let set for 12 hours.
- Invert the marshmallow slab onto a dusted cutting board and cut into individual marshmallows.
- Toss marshmallows in remaining powdered sugar mixture to coat.
