Homemade Marshmallows

Ingredients

The marshmallow base

  • 3 packets unflavored gelatin
  • 1 C ice water
  • 1 ½ C sugar
  • 1 C light corn syrup
  • ¼ teaspoon kosher salt
  • 1 teaspoon vanilla extract

The coating

  • ¼ C corn starch
  • ¼ C powdered sugar

Optional ingredients for variations

  • 3-4 tablespoons cocoa powder
  • ½ teaspoon peppermint extract
  • to taste none food coloring
  • ½ C dipping chocolate
  • to taste none crushed candy canes

Instructions

  1. Combine gelatin and ½ C ice water in a stand mixer bowl and set aside.
  2. In a saucepan, combine remaining ½ C water, corn syrup, sugar, and salt; bring to a boil.
  3. Simmer the mixture until it reaches 245°F, stirring occasionally.
  4. Remove from heat and slowly pour the sugar mixture into the gelatin while mixing on low speed.
  5. Increase mixer speed to medium-high and whip for 12-15 minutes, adding vanilla in the last few minutes.
  6. Prepare a 9x13 pan by spraying with non-stick spray and coating with a mixture of cornstarch and powdered sugar.
  7. Scrape the marshmallow mixture into the prepared pan and smooth the top.
  8. Let the pan sit at room temperature for about an hour, then sprinkle with cornstarch mixture and cover with plastic wrap.
  9. Let sit overnight to set.
  10. Cut marshmallows into cubes and dust with remaining cornstarch mixture.
