Homemade Marshmallows

Instructions
- Combine gelatin and ½ C ice water in a stand mixer bowl and set aside.
- In a saucepan, combine remaining ½ C water, corn syrup, sugar, and salt; bring to a boil.
- Simmer the mixture until it reaches 245°F, stirring occasionally.
- Remove from heat and slowly pour the sugar mixture into the gelatin while mixing on low speed.
- Increase mixer speed to medium-high and whip for 12-15 minutes, adding vanilla in the last few minutes.
- Prepare a 9x13 pan by spraying with non-stick spray and coating with a mixture of cornstarch and powdered sugar.
- Scrape the marshmallow mixture into the prepared pan and smooth the top.
- Let the pan sit at room temperature for about an hour, then sprinkle with cornstarch mixture and cover with plastic wrap.
- Let sit overnight to set.
- Cut marshmallows into cubes and dust with remaining cornstarch mixture.
