Homemade S'mores

Ingredients

  • 3 packages unflavored gelatin
  • 1 cup ice cold water, divided
  • 12 ounces granulated sugar
  • 1 cup light corn syrup
  • ¼ teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • ¼ cup confectioners’ sugar
  • ¼ cup cornstarch
  • 1 spray nonstick spray

Instructions

  1. Soak gelatin in ½ cup of ice cold water in a mixing bowl.
  2. In a saucepan, combine remaining water, granulated sugar, corn syrup, and salt; cook until it reaches 240°F.
  3. Slowly pour the sugar syrup into the gelatin while mixing on low speed.
  4. Increase the mixer speed to high and whip until thick and lukewarm, adding vanilla in the last minute.
  5. Prepare a baking pan with nonstick spray and dust with a mixture of confectioners’ sugar and cornstarch.
  6. Pour the marshmallow mixture into the prepared pan and dust the top with more sugar and cornstarch.
  7. Allow marshmallows to sit uncovered for at least 4 hours or overnight.
  8. Cut the marshmallows into squares and dust with the remaining sugar mixture.
