Homemade S'mores

Instructions
- Soak gelatin in ½ cup of ice cold water in a mixing bowl.
- In a saucepan, combine remaining water, granulated sugar, corn syrup, and salt; cook until it reaches 240°F.
- Slowly pour the sugar syrup into the gelatin while mixing on low speed.
- Increase the mixer speed to high and whip until thick and lukewarm, adding vanilla in the last minute.
- Prepare a baking pan with nonstick spray and dust with a mixture of confectioners’ sugar and cornstarch.
- Pour the marshmallow mixture into the prepared pan and dust the top with more sugar and cornstarch.
- Allow marshmallows to sit uncovered for at least 4 hours or overnight.
- Cut the marshmallows into squares and dust with the remaining sugar mixture.
