Instructions
- Prepare two square non-metallic baking dishes by greasing them with butter.
- Toast the coconut flakes until golden brown and pour half into one baking dish.
- In a mixing bowl, combine cold water and gelatin, and let it set.
- In a pot, combine maple syrup and salt, heat until it reaches 240°F.
- Slowly pour the hot syrup into the gelatin mixture while mixing on low speed.
- Increase mixer speed to high and whip until thick and fluffy, about 10-15 minutes.
- Add vanilla extract and mix until combined.
- Spread half of the marshmallow mixture into the baking dish with toasted coconut.
- Mix the remaining marshmallow fluff with chocolate chips and peppermint extract, then spread in the second baking dish.
- Allow both batches to set for at least 6-8 hours or overnight.
- Cut into squares and serve.
