Homemade Marshmallows

Instructions
- Grease a 9x13 inch baking dish with coconut oil and line it with parchment paper, greasing the paper as well.
- Dust the pan lightly with tapioca or arrowroot starch.
- In a bowl, pour water and sprinkle gelatin over it, allowing it to bloom for 5-10 minutes.
- In a saucepan, combine the remaining water, honey, and maple syrup, and heat until it reaches 240°F.
- Slowly pour the hot syrup into the bloomed gelatin while mixing on medium speed.
- Add vanilla and sea salt, then increase the speed to high and beat until fluffy and tripled in volume.
- Pour the mixture into the prepared pan and smooth the top.
- Let the marshmallows set uncovered for 6 hours or overnight.
- Using the parchment overhang, lift the marshmallow out and dust with starch before cutting into squares.
- Dust the cut sides with more starch to prevent sticking.
