Instructions
- Prepare a baking dish by lining it with parchment paper and dusting it with half of the powdered sugar and corn starch mixture.
- In a heat-proof bowl, whip the aquafaba and cream of tartar until stiff peaks form.
- In a saucepan, combine agar agar powder and water, bring to a boil, and whisk for 3 minutes.
- Add sugar to the boiling mixture and boil untouched for 7 minutes.
- Remove from heat and stir in vanilla extract and salt.
- With the mixer on low, gradually add the hot syrup to the whipped aquafaba while whisking, then beat on high for 8 minutes.
- Pour the marshmallow mixture into the prepared dish and dust with the remaining powdered sugar and corn starch mixture.
- Let the marshmallows sit at room temperature for 2-3 hours until set, then cut into squares.
