Vegan Marshmallows

Ingredients

  • ½ cup powdered sugar
  • ½ cup corn starch
  • ½ cup aquafaba
  • ¼ teaspoon cream of tartar
  • 1 tablespoon agar agar powder
  • 1 cup water
  • cup sugar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare a baking dish by lining it with parchment paper and dusting it with half of the powdered sugar and corn starch mixture.
  2. In a heat-proof bowl, whip the aquafaba and cream of tartar until stiff peaks form.
  3. In a saucepan, combine agar agar powder and water, bring to a boil, and whisk for 3 minutes.
  4. Add sugar to the boiling mixture and boil untouched for 7 minutes.
  5. Remove from heat and stir in vanilla extract and salt.
  6. With the mixer on low, gradually add the hot syrup to the whipped aquafaba while whisking, then beat on high for 8 minutes.
  7. Pour the marshmallow mixture into the prepared dish and dust with the remaining powdered sugar and corn starch mixture.
  8. Let the marshmallows sit at room temperature for 2-3 hours until set, then cut into squares.
