Ingredients

For Dusting

  • ½ cup powdered sugar
  • ½ cup cornstarch

For Marshmallows

  • ½ cup aquafaba
  • ¼ teaspoon cream of tartar
  • 2 teaspoons vanilla extract

For Syrup

  • 1 cup granulated sugar
  • cup water

For Agar Mixture

  • 4 teaspoons agar-agar powder
  • ¼ cup granulated sugar
  • ¾ cup water

Instructions

  1. Prepare a 9-inch pan by lining it with parchment paper and dusting it with powdered sugar and cornstarch.
  2. Whisk the aquafaba and cream of tartar in a stand mixer until soft peaks form.
  3. In a saucepan, combine sugar and water, heat until it reaches 240°F without stirring.
  4. Slowly drizzle the syrup into the whipped aquafaba while whisking, then whisk until glossy and stiff peaks form.
  5. In another saucepan, mix sugar, water, and agar-agar powder, bring to a boil and whisk for 2-3 minutes.
  6. Slowly pour the agar mixture into the aquafaba mixture while whisking until fully incorporated.
  7. Transfer the mixture to the prepared pan and spread evenly, then cover and let cool for 4-6 hours until set.
  8. Dust the tops with powdered sugar and cornstarch, then cut into squares or desired shapes.
