Instructions
- Line an 8x8 inch pan with parchment paper.
- In a large bowl, sprinkle gelatin over ½ cup warm water and whisk immediately. Set aside.
- In a saucepan, combine remaining ½ cup water, powdered sweetener, and sea salt. Heat until hot but not boiling, stirring until sweetener dissolves.
- Remove from heat and stir in vanilla extract. Pour the hot mixture into the gelatin while whisking constantly.
- Using a hand mixer, beat the mixture on high for about 12-15 minutes until it doubles in volume and resembles stiff peaks.
- Transfer the mixture into the prepared pan and refrigerate for at least 8 hours or overnight until set.
- Cut into squares using a sharp knife.
