Sugar Free Marshmallows

Ingredients

  • 2 tbsp Unflavored gelatin powder
  • 1 cup Water (warm, divided)
  • 1 ½ cups Besti Powdered Monk Fruit Allulose Blend
  • ¼ tsp Sea salt
  • 2 tsp Vanilla extract

Instructions

  1. Line an 8x8 inch pan with parchment paper.
  2. In a large bowl, sprinkle gelatin over ½ cup warm water and whisk immediately. Set aside.
  3. In a saucepan, combine remaining ½ cup water, powdered sweetener, and sea salt. Heat until hot but not boiling, stirring until sweetener dissolves.
  4. Remove from heat and stir in vanilla extract. Pour the hot mixture into the gelatin while whisking constantly.
  5. Using a hand mixer, beat the mixture on high for about 12-15 minutes until it doubles in volume and resembles stiff peaks.
  6. Transfer the mixture into the prepared pan and refrigerate for at least 8 hours or overnight until set.
  7. Cut into squares using a sharp knife.
