Matcha S'mores

Instructions
- Sift together powdered sugar and cornstarch.
- Grease a 10" x 8" casserole dish with vegetable oil and dust with powdered sugar mixture.
- Whisk hot water and matcha powder in a small bowl until dissolved and set aside to cool.
- In a stand mixer bowl, sprinkle gelatin over ½ cup of water and let sit for 10 minutes.
- In a medium saucepan, combine sugar, corn syrup, salt, and remaining ¼ cup water; heat until sugar dissolves.
- Bring the mixture to a hard boil and cook until it reaches 240°F.
- With the mixer on low, carefully add the boiling mixture to the gelatin and beat on high for 8-10 minutes until it doubles in volume.
- Add the matcha mixture and beat for an additional minute until incorporated.
- Pour the mixture into the prepared dish, smooth the top, and dust with powdered sugar/cornstarch mixture.
- Cover and let set for about 4 hours or overnight.
- Once set, invert the marshmallow onto a cutting board, cut into 1-inch cubes, and store in an airtight container.
