Spicy Pumpkin Black Bean Burgers

Ingredients

  • 2 stalks celery with leaves
  • 1 large carrot
  • 1 small zucchini
  • 1 small jalapeno
  • 2 cloves garlic
  • 2 tablespoons chia seeds
  • ¼ cup pumpkin seeds
  • 1 cup old-fashioned oats
  • 2 tablespoons tomato paste
  • 1 teaspoon onion powder
  • 2 teaspoons cumin seeds
  • 1 teaspoon paprika
  • 1 tablespoon soy sauce
  • 2 tablespoons fresh cilantro
  • 1 cup canned pumpkin
  • 1 15-ounce can black beans

Instructions

  1. Chop celery, carrot, zucchini, jalapeno, garlic, chia seeds, and pumpkin seeds in a food processor until finely chopped.
  2. Add oats, tomato paste, onion powder, cumin seeds, paprika, soy sauce, cilantro, pumpkin, and black beans to the processor and mix until combined.
  3. Refrigerate the mixture for about 1 hour until thickened.
  4. Preheat the oven to 375°F.
  5. Shape the mixture into 8 burger patties using a measuring cup.
  6. Place the patties on a baking sheet and bake for 30-35 minutes until golden brown.
