Spicy Black Bean Veggie Burgers

Ingredients

The patties

  • 1 unit jalapeno pepper
  • 2 cloves garlic
  • 2 15 oz cans black beans
  • 2 teaspoons cumin
  • 1 ¼ teaspoons salt
  • ½ cup panko bread crumbs
  • 2 tablespoons tomato sauce
  • ½ cup corn
  • 2 units eggs
  • 4 teaspoons extra virgin olive oil
  • ¾ of an avocado avocado
  • 3 teaspoons sriracha

The buns

  • 6 units light whole wheat sandwich rolls or burger buns

Instructions

  1. Chop the jalapeno and garlic, then pulse in a food processor until finely chopped.
  2. Add one can of black beans, cumin, and salt to the processor and blend until a chunky paste forms.
  3. Transfer the mixture to a bowl and mix in bread crumbs, tomato sauce, corn, and eggs.
  4. Stir in the remaining can of black beans and form the mixture into 6 patties.
  5. Heat oil in a skillet over medium-high heat and cook patties for 3-4 minutes on each side until golden brown.
  6. Assemble the burgers by placing each patty on a bun and topping with sliced avocado and sriracha.
